White beans, mushrooms and leeks in an Épi bowl, with wholegrain bread at the side

Dinner for one, starting with a jar of white beans

One pan, white beans and mushrooms: prepare and serve dinner for one.

Dinner for one can begin with sliced bread, warm food served in a bowl and time to sit down. Cooked white beans, mushrooms and leek provide the starting point. Watch the pan, then notice the serving: can you scoop up the liquid, dip the bread and leave enough room in the bowl?

Prepare a portion for yourself

Cooked beans shorten the preparation, mushrooms bring their aroma and the leek softens. Keep the bread separate to dip as you eat. When shopping, check for beans marked “cooked” and use the drained weight. Depending on the jar, 150 g may not be its whole contents.

Serves one · allow around 25–30 minutes. Have a frying pan, spatula, knife and colander ready; a toaster is optional. The proposed quantities are a starting point to adapt to your appetite.

Ingredients: 150 g of cooked, rinsed and drained white beans; 200 g of trimmed button mushrooms; 80 g of the white and tender green parts of a leek; around 60 g of wholegrain bread, served separately.

To season: 2 teaspoons of olive oil, around 10 ml; 1 garlic clove; 3 g of parsley; around 1 teaspoon of lemon juice; 60–100 ml of water; salt and pepper. The bread contains wheat: if necessary, choose a gluten-free accompaniment suited to your needs.

Watch the pan as well as the clock

1 · Clean and cut evenly. Split the leek lengthways, rinse soil from between the leaves, then slice thinly. Clean the mushrooms, wipe away surface water and cut into slices around 5 mm thick. Chop the garlic and washed parsley. Rinse and drain the cooked beans, then set aside.

2 · Let the mushrooms release their water. Heat 1 teaspoon of oil in the pan over a medium-high heat. Add the mushrooms, spreading them out as much as possible. Cook for around 7–10 minutes, until their liquid has reduced noticeably and the edges begin to brown. In a small pan, work in batches. If water collects in the bottom, let it evaporate before continuing.

3 · Add the leek and beans. Reduce to a medium-low heat. Add the second teaspoon of oil and the leek; cook for 4–5 minutes until tender. Add the garlic for around 30 seconds, then the cooked beans and 60 ml of water. Stir gently and simmer for 5–7 minutes, until the beans are hot throughout. Add water gradually if needed, initially up to 100 ml. To thicken the liquid slightly, mash a tablespoon of beans and stir them back in.

4 · Taste before taking off the heat. Check that the beans are tender and the liquid coats the ingredients. If there is too little, add a tablespoon of water; if too much, cook a little longer. Taste before adjusting salt and pepper. Off the heat, add parsley and lemon juice gradually. Toast the bread meanwhile, or simply serve it sliced. Times and results vary with the pan, heat and ingredients: check that everything is cooked and thoroughly reheated.

Make room for the spoon, and a place for the bread

A deep bowl already at home can serve this meal. Spoon in some beans and leek, add the mushrooms, then a little liquid. Leave space below the rim. Put the bread on a small plate alongside, to enjoy the contrast between soft and crisp as you eat. If the quantity is large, serve the extra separately.

For this use, OrienX proposes Grain · Deep Bowl. Its 15 cm opening, 7.5 cm height and stated 800 ml capacity gather vegetables, pulses and a little liquid. Leave room for the spoon and serve any extra separately. The form can be judged through use, from serving to the last few mouthfuls.

After eating, keep one detail to adjust: less liquid, thicker mushroom slices or a different cooked pulse. Next time, change only that point and notice the result. A specific personal experience helps a proposal become your own way of cooking.

Preparing and serving deserve a place even when you eat alone. Cook ordinary ingredients, then sit down with a bowl you enjoy: this is an everyday moment OrienX wishes to accompany. To explore pulses, read Protein in a plant-based meal; for another preparation based on grains, try Bulgur, lentils and roasted carrots.
