Unpacking market vegetables in a home kitchen, with a Rosée salad bowl

A vegetable bowl that changes with the market

Change the vegetables as the market changes, using the same everyday bowl.

At the market, fresh lamb’s lettuce may look inviting; back at home, you may also want something warm. Roasted squash, a few chickpeas and leaves added just before serving can bring both wishes into one bowl. When the available vegetables change, the same bowl can hold a different combination.

What it means to follow the moment

The fourteenth-century Chinese work Yinshan zhengyao includes a section on “what is suitable for the four seasons.” It connects the seasons and food within a traditional understanding of health. Its directions belong to its time and medical framework; it is not a calendar for French vegetables.

OrienX takes from it an attentiveness to change. In a French kitchen today, that can begin without fixed rules: notice what is available, the day’s temperature and what you feel like eating, then choose a way of preparing it. The dish below is our contemporary composition. It does not reproduce the old text’s food prescriptions or health promises.

Roasted squash, chickpeas and lamb’s lettuce

Makes two small side portions. Allow about 30–40 minutes, depending on the oven and the size of your squash pieces. You will need a baking tray. If this dish becomes the centre of a meal, add other foods according to your appetite and the rest of your day.

Ingredients: about 250 g squash flesh, 120 g cooked and drained chickpeas, 30–40 g lamb’s lettuce, two teaspoons olive oil, one to two teaspoons lemon juice, and salt and pepper to taste. Parsley can replace or accompany the leaves. Rinse and drain canned chickpeas.

1 · Roast the squash. Heat the oven to 200°C, or about 180°C with the fan on. Cut the squash into pieces about 2 cm across, peeling it if the variety requires it. Toss with one teaspoon of oil and spread on the tray. Roast for around 20–30 minutes, turning once, until tender all the way through. The time will vary with the squash and oven.

2 · Prepare the fresh elements. While it roasts, wash the lamb’s lettuce thoroughly and drain well. Rinse the cooked chickpeas. Warm them gently with a tablespoon of water if you would like to serve them warm, or keep them at a suitable serving temperature for your meal.

3 · Bring everything together gently. Let the squash lose its intense heat for a few minutes. Put the chickpeas and squash in the bowl, add the leaves and the second teaspoon of oil. Toss gently, taste, then add lemon, salt and pepper gradually. If the bowl feels too full to mix, transfer some out first: room to move matters more than filling it to the top.

Space for today’s vegetables

The opening of Rosée · Low Salad Bowl, about 20.2 cm across, and its sides let you combine leaves and cooked vegetables, turn them gently and serve. Its stated 1.1-litre capacity gives this preparation room as long as you leave space for mixing. How much each person takes depends on the rest of the meal, not the bowl’s maximum volume.

Next time, keep the method and change one element. Another cooked vegetable can stand in for squash; other leaves can replace the lamb’s lettuce, according to what you find and enjoy. “Following the moment” becomes a way to observe and cook, rather than a required shopping list.

To build the rest of a plant-based meal, Protein in a plant-based meal offers nutritional pointers separate from this cultural story. The seasonal idea explains why we are willing to vary the dish; nutrition needs its own sources and the whole day’s eating matters.
