Why it works

The 14.3 cm centre gathers the food; an approximately 4.5 cm rim keeps a visible space around it. Its depth sets it apart from the flatter Gourmet Plate, intended for portions with less sauce.

Japanese plating gives space around the food a role in the composition. OrienX made that idea tangible in a rim of approximately 4.5 cm: even when the recessed centre holds a sauced dish, the food has a clear visual boundary.
